Founded by Alice Waters and an assortment of idealistic friends in 1971, Chez Panisse recently celebrated its thirty-fifth year with a restatement of its commitment to good food, community, and sustainability. It is very simple: Chez Panisse gathers its material from known and trusted purveyors, known to be committed themselves to sound and sustainable practices, and trusted to remain informed and responsive to these values in a rapidly changing society.

By soundness Chez Panisse means healthful products and practices, as pure and natural as possible, without synthetic additives or pollutants, without unnecessary complexities of packaging and marketing. By sustainability Chez Panisse means conservation of resources, both natural resources like the families, businesses, and networks that plant and harvest and provide.

Chez Panisse seeks farmers who know their seeds and soil, ranchers who care about the food their livestock eats, winemakers who know what their grapes have known, fish merchants who are concerned about the health of the seas. To them Chez Panisse adds kitchen and wait staff who care about the material of their work, knowing they will enjoy and take pride in the technical expertise they add to it. Chez Panisse reaffirms its commitment to all this, knowing that it is central to both the deepest and the most joyous of human activities: generosity, companionship, nourishment, growth.

The restaurant, located downstairs, is open for dinner Monday through Saturday, by reservation only. The dinner, served in two seatings from 6:00 to 6:30 p.m. and 8:30 to 9:30 p.m., has always consisted of only one fixed-price menu, of three to four courses. The menu changes every night, designed to be appropriate to the season and composed to show off the finest ingredients obtainable.

The Cafe at Chez Panisse, located upstairs, opened in 1980 to offer an alternative to the set menu served in the Restaurant downstairs. The Cafe offers a moderately priced A la carte menu for both lunch and dinner. The Cafe hours are Monday through Thursday 11:30 a.m. to 3 p.m. and 5 to 10:30 p.m., and Friday and Saturday 11:30 a.m. to 3:30 p.m. and 5 to 11:30 p.m.
