Keswick Creamery at Carrock Farm is committed to making healthful dairy products, especially handcrafted artisanal cheeses, from milk produced on their grass-based farm in a humane and sustainable way. Their cows are not confined to a barn, but are instead allowed to graze freely on lush pastures. The farm does not use rBST and we does not dock the cows' tails. They have not used herbicides, pesticides, or chemical fertilizers on the farm in twenty-five years, and use organic practices on the farm even though they are not certified organic, since they purchase some feed locally. They sell at farmers' markets, restaurants and stores in PA, DC and MD. In February 2001, they started making aged raw milk cheeses in their small, licensed on-farm cheese plant. In February 2006, they added a pasteurizer and started making fresh products such as ricotta, soft cheese, and yogurt. All of their cheeses are handmade using traditional, time-honored methods and only fresh milk, live cultures, and calf rennet. Since their cows are fed their natural diet of grass and hay our cheese is a natural creamy yellow color. As the seasons change the color of the cheese will vary depending on how much fresh grass our cows consume.
