At Snoep Winkel farm the Van Boerum family pasture-raises beef, goat, chicken, and lamb just outside of Culvers Lake in northwestern New Jersey. All the animals are free to roam out on pasture for their entire lives and they are never supplemented with hormones, antibiotics, or animal by-products. The goats, cattle, and lambs are predominantly grass-fed, but they do receive some grain. All animals are processed by a local butcher who will cut the meat according to customer specifications. Lamb is typically available for purchase around Easter, although customers are encouraged to reserve their lamb in winter. That way the Van Boerums can raise the lamb appropriately, helping it reach an ideal weight and size before processing. Goat is usually available in the late summer and early fall and beef can be purchased in the fall and spring, basically every six months. Eggs are available year-round.
