Red Star's practices include recycling kitchen grease and excess cooking oils into bio-diesel fuel; dishes featuring seasonal organic and local ingredients; beef that is source-verified 100% Angus and tested to be BSE-free; selecting seafood according to Monterey Bay Aquarium Seafood Watch standards; serving organic coffee, tea, and juices. The chefs take full advantage of a wealth of local and regional ingredients as they operate Red Star's aromatic wood-fired brick oven, rotisserie, smoker and a sizzling grill, all of which are visible in the open kitchen of our 200 seat restaurant. Dishes reflect the culinary riches found in the nearby coast and waterways, the close proximity to Oregon's wine country and the nearby farms.
