Serious Pie developed as a natural extension of their expanded bread bakery, which produces bread for all the Tom Douglas restaurants and for wholesale and retail sales. Therefore, the "Pie" is a pizzeria with a bread baker's soul. Tom's vision of the perfect pie is simple but serious on a blistered crust, lightly textured with just enough structure and bite and the right amount of serious toppings like their own house made mozzarella, their own sustainably made and raised sausage and pancetta, as well as foraged mushrooms, local clams, and farmers market produce.
