Lento is committed to encouraging “green” thinking. Lento, restaurant focuses on using local, sustainable, organic, bio-dynamic, and seasonal foods. As a restaurant we have developed ways to have a minimal impact on the environment. As a restaurant we believe in educating people about environmental sustainability, energy consumption, minimizing waste and reducing food miles. We support: from farm to table, slow foods, and think local movements. By working with local farmers we help cut carbon emissions, minimize the need for pesticides and help support a local economy. Lento follows the great Alice Walters ideas of seasonality. In order to experience great foods we need to appreciate where and when it comes from. All of our fish is sustainable caught. We use low mercury level fish. All of the fish is day boat caught.
