After years of only being able to order a "vegetarian burrito" without cheese and sour cream every time the vegan owner of Flacos went out to a Mexican dinner, this young upstart decided, with encouragement from his friends, to open his own Vegan Mexican eatery. Debuting at the Berkeley Farmer's Market, Flacos' inspiration comes from the years the Chef and owner spent making traditional Mexican food with his sister and mother. Using these traditional recipes and then replacing animal products with vegetarian based substitutes, the cuisine of Flacos was crafted and a legend born. Using locally sourced, GMO-free and organic ingredients, customers can be sure that not only is what they're eating authentic Mexican, but also authentic food.
