The latest addition to the emerging Williamsburg restaurant scene is The Bedford. Chef Joyal explains the restaurant’s farm to table philosophies: “My aim was to create an accessible menu using the best available local ingredients; great dishes start with the components. I take it upon myself to go to the markets each morning to pick the day’s produce, choosing unusual varieties and flavor combinations to play off our classic dishes. Fish is sourced from a variety of local and reputable fishmongers, and the meats come from well-known organic farmers.”
The Bedford prides itself on its farm-to-table new American menu, providing the highest quality and freshness of ingredients at accessible prices.
