Chip and Connie Foy have the perfect spot off Pacetti Road for growing lettuces and herbs hydroponically. The farm looks like a field of white and green skinny trees because the lettuces and herbs stack up one over the other on special designed racks. They have plenty of water from an artisan well and they sprout the young lettuces in a mixture of Sri Lankan coconut and regular perlite. If there is a threat of frost, the Foys can cover the scaffolding, protecting the plants. As for bug protection, they only use organically approved pesticides. Chip Foy is bringing his produce several times a week to Stewart’s Market where one can see a hydroponic “Lettuce tree” in the window. On the farm he grows the following lettuces: red and green Romaine, Bibb, green leaf, red sails, and a new variety called “red fire”. Several herbs are in evidence, too, including cilantro, regular garlic chives, parsley, mint, and rosemary.Near This Listing
