They're a European café and bakery nestled deep in the heart of Texas. They use fresh, local ingredients whenever possible, including East Poultry natural chicken, Anderson's and Texas Coffee Traders coffee, Amador Farm's lettuce, Hill Country peaches and Texas farm fresh eggs. They believe ingredients that don't travel great distances and aren't preserved for long periods of time retain more of their flavor and nutrition.

Then they add the skills of their trained cooks and bakers. They fold butter into their croissant, Danish, and puff dough. They scoop, shape, and bake cookies and cakes daily. They slice, dice, and chop ingredients for their soups using chicken and vegetable stocks they made themselves. They make their own butter cream icings, and mayonnaise (maybe that's why their egg, chicken, and tuna salads cannot be duplicated.)
