Lisa Kaiman raises Animal Welfare Approved laying hens, beef, and dairy cattle at Jersey Girls Dairy in Chester, VT. Lisa worked on other dairies for a decade before starting her own dairy in 1999. Lisa milks a herd of 50 Jersey cows in a “cow-friendly”, intensive rotational grazing system and has a flock of about 250 pastured laying hens. “I believe that the quality of life of the animals is directly represented in the quality of the food provided by them. “ Lisa says. “I allow the cows to be cows and the chickens to be chickens. I am aware daily that without me, she is still a cow, however, without her I am no longer a dairy farmer.” Being such a passionate supporter of small, sustainable farming and natural, humane animal products, Lisa opened the “We Are All What We Eat” (WAAWWE) market in 2007, which has since expanded to become “Jersey Girls Farm Café & Market at WAAWWE.” There, she sells her pastured eggs, beef, and farm fresh pasteurized milk, in addition to products from other nearby farmers and food producers, including artisan cheeses, seasonal vegetables, locally-roasted coffees, and other prepared and homemade foods. Through hard work, innovative thinking and sincere love of her animals Lisa has grown the business. She now has a full scale pasteurizing operation and bottling line and is selling milk and veal at not only her own retail store up the road, but at area farmers markets, local groceries and restaurants.
