Founded by Apotheke owner Heather Tierney, the Butcher's Daughter is a cheekily-named homage to the greener genre. Showcasing vegetables the way a butcher showcases meat is the idea. Raw juices, sandwiches, salads, and soups are featured on the menu, some made to mimic their meat-based counterparts. The aim is fresh, creative, local, and seasonal, and the Butcher's Daughter is right on target. Owner Tierney is committed to sourcing everything possible locally, even partnering with supplier Mike’s Organic to have their own plot in upstate New York.
