About Haystack Mountain Goat Dairy

Haystack Mountain produces a variety of cheeses, including fresh chevre, surface-ripened, and aged varieties. Their cheeses are nationally-recognized for their fresh, clean flavor and superior texture—a direct result of the quality of their milk and the skill of our cheesemaker, Jackie Chang. All of the goat milk for their cheese is sourced from the Skyline Correctional Center goat dairy, located in Cañon City. The employees are inmates who work for Colorado Correctional Industries (CCI). The dairy was established as a joint venture between Haystack Mountain and CCI; it’s a symbiotic partnership that provides us with a high-quality, consistent milk source, and provides qualified inmates with valuable occupational and life skills. Statistics show that agricultural/animal husbandry programs have a profoundly rehabilitative impact on inmates, resulting in reduced recidivism rates.
