Jim 'N Nick's started cooking pork "low and slow" in 1985 when Nick, along with his dad Jim, reclaimed an old dry cleaners on Clairmont Avenue in Birmingham, Alabama, where they opened the first Jim 'N Nick's Bar-B-Q. Today, with 33 restaurants in 7 states and their original recipes still in use, Jim 'N Nick's Bar-B-Q has become a Southern institution and a partner in Fat Back Farms, a collaboration that supports regional production of heritage hogs and the ranchers who humanely raise them. This collaboration increases access to and provides pastured-raised, high quality, heritage breed pork to their full chain of restaurants by working closely with local producers who make the availability of heritage breed pork possible.
