About Mashiko

Since 1994, Mashiko has given owner/Chef, Hajime Sato, a way to share his thoughts on food and culture. As of August 15, 2009, Mashiko is Seattle's first fully sustainable sushi bar. Sato accomplishes this through several core values. Including a deep understanding of where his seafood comes from, where and how it was caught, while paying attention to the proper farming of certain species so that populations do not decline to a hazardous level. Sato has a solid relationship with several top seafood sustainability experts. and appreciates the support they've received from both customers and industry insiders. Mashiko's education has been intense, and it will be ongoing and Sato encourages you to keep the Sustainable Seafood Guide presented with your check so that all his customer may learn more.
