It's a Wednesday morning, and Paul C. Reilly is standing at the back door of Beast + bottle, chatting about the harvest with a farmer who just dropped off a box of fresh produce. You can almost hear the cogs turning in Paul's brain as he starts to devise dishes centered on the ingredients in the boxes.

Relationships like this, which exist with more than twenty local purveyors, have been the backbone of the beast + bottle concept ever since Paul, who mans the burners, and his sister Aileen, who oversees front of house, opened the cozy restaurant in March 2013. Beast + Bottle serves rustic American craft cuisine that centers on what Paul calls "farm-focused food": a dedication to dishes built around fresh ingredients available in Colorado or a neighboring state.
