Historically, when you look at cultures that live in hot parts of the world, food is acidic, citrusy, brothy and spicy because that's what works with the climate. Central Texas is lucky enough to have a vibrant community of farmers and food artisans who provide incredible produce, meat, cheese and inspiration. They source almost exclusively from them to serve a menu that changes with the seasons, and that's truly Texas food.
