The modern American cuisine at Willow is seasonally driven, with many of the ingredients made in-house, complemented by a list of natural wines, local beers and craft cocktails. The menu showcases their unique relationships with producers, including Star Route Farm in upstate New York, and the Pennsylvania-based Happy Valley Meat Company. Executive Chef John Poiarkoff marries new and familiar tastes with a focus on seasonal and house-made ingredients.
