An independently owned seasonal, farm-driven restaurant, and whole-carcass butcher shop in Portland, Oregon. Old Salt Marketplace exists to serve the neighborhood. Situated at the intersection of Cully, Concordia, and Beaumont-Wilshire, the business comprises several elements – deli & meat shop, supperhouse & bar, event & classroom, and a mid-week farmers' market through the summer.

Partnered with Hawley ranch for 100% of their beef, and Payne Family farms for 100% of their pork. They buy their vegetables from 20+ local farms, putting food by during Summer toward leaner times. They bake all of their breads, ferment their own pickles and krauts, make all of their delicious sausages, cure and smoke all of their meats (from American style hams to bologna, to bacon!), and cook over an open hearth. They even fire their hearth with fruit wood from their friends at Mountainview Orchards.

They do everything the hard way. They stand by every thing they make.
