Thistle Meats offers locally raised beef, lamb, goat, pork, rabbit, and poultry from farms and ranches they know and trust. They adhere to a philosophy of whole animal butchery, offering hand made charcuterie, pates, salumi, terrines, and other cured meats as well as local produce, cheese, eggs, and prepared foods: a sandwich of the day, soups, stews, bone broths, marinated and seasoned meat cuts.

This type of butcher is an older craft. It is a beautiful challenge that requires knowledge and respect for every part of the animal. The butchers at Thistle Meats will continue to work with their mentors to develop a program that is sustainable and meets the needs of their customers, the integrity of their shop, and the longevity and health of their suppliers.
