About Two Bars Seven Guest Ranch

Two Bars Seven has been in the Schaffer family for four generations, since the days of territorial government in the late 1800's. Our ranch family raises stock horses and Beefalo cattle, a hardy buffalo hybrid, whose meat is natural, leaner, and more nutritious than that of domestic cattle.

Two Bars Seven sits on 7,000 acres of secluded mountains, meadows and forests along the eastern slope of the Rocky Mountains on both sides of the Colorado-Wyoming border.

The ranch hosts a variety of guests every May through November. Among those we accommodate are vacationers, family reunions, small conferences and retreats, summer camps for kids, artists, and people with special dietary needs. Being an organic operation, Two Bars Seven features meals that are as wholesome and healthy as possible. In short, the table reflects the health of the ranch. Guests are even welcome to bring their own coolers, so that when their stay is over they can go home with a good supply of pastured, all-natural beefalo meat.

Some of the best times to visit are the late spring and the fall. In May, guests can not only take in the natural beauty of the season, but they can also help out with the calving, which allows them to take view of how a traditional, sustainable ranch operates. And in the fall, guests can help out with gathering beefalo off the range.

The surrounding area provides ideal access to a variety of outdoor activities like hiking, fishing, wildlife-watching, and rock climbing. Or stay inside and cozy up in front of the fireplace in our lounge or unwind in the hot tub to a coyote serenade. With its varied and undeveloped terrain, our scenic location provides an ideal opportunity for horseback riders of all experience levels. We offer freedom to the more seasoned rider, friendly instruction for anyone who asks, and rides suited to every ability.

Two Bars Seven also offers Guest Ranch Apprentice Certification. At our Guest Ranch Apprentice Camp we teach people 15 and up how to be perfect ranch employees, as training for a summer job, or to simply have fun. All you need is a good attitude and your learner's permit or driver's license.

Please note that while we do offer a secluded retreat, we are remarkably accessible. Two Bars Seven is located within a two hours drive of the Denver airport. In fact, most people can leave their homes in the morning, fly into Denver, and arrive at the Ranch in time for dinner.
