Sabio opened in April 2012 and is a trendy, casual fine dining restaurant inside the historical Dudley Square school house located on the corner of Maxwell & Mill Streets in downtown Lexington, Kentucky. Sabio creates all their dishes fresh, from scratch, in the Sabio Kitchen – even their house made ice creams. The culinary team is lead by Executive Chef and Owner Javier Lanza, a James Beard Award Winning Chef. Sabio prides themselves on offering the freshest and best ingredients to create exceptional dishes for their guests. They have herbs like lavender, sage, thyme, basil and mint growing in the Sabio Herb Garden and update their menus seasonally. Most importantly, they make all of their food fresh; farm-to-table as they say. They're a Kentucky Proud establishment buying from local farms.
